Ingredients
Red Snapper
- 2 7-9 oz Red Snapper Filets
- 1 cup Flour
- 2 T Butter
- 2 T olive oil
- 1 To Taste Salt
Jerk Hot and Sour Peppers
- 1 Julienne Red Pepper
- 1 Julienne Yellow Pepper
- 1 Julienne Poblano Pepper
- 1/2 Julienne White Onion
- 1 Garlic Clove minced
- 1/2 cup Red Wine Vinegar
- 1/4 cup Sugar
- 1/2 cup Mista Brown's Original Jerk Sauce
- 1 T Butter

Instructions
Jerk Hot and Sour Peppers
- Sweat onions in butter until they become translucent.
- Add garlic on low heat.
- Add peppers and saute until soft.
- Add sugar and cook until most liquid is evaporated.
- Deglaze with red wine vinegar and reduce until dry.
- Finish with garlic, salt, pepper and jerk sauce.
Snapper
- Season the snapper filets with salt and black pepper and dredge in flour.
- Pan fry the filets in oil and butter until golden brown and cooked through.
- Serve topped with jerk hot and sour peppers.
