Jerk Hot and Sour Peppers
  1. Sweat onions in butter until they become translucent.
  2. Add garlic on low heat.
  3. Add peppers and saute until soft.
  4. Add sugar and cook until most liquid is evaporated.
  5. Deglaze with red wine vinegar and reduce until dry.
  6. Finish with garlic, salt, pepper and jerk sauce.
Snapper
  1. Season the snapper filets with salt and black pepper and dredge in flour.
  2. Pan fry the filets in oil and butter until golden brown and cooked through.
  3. Serve topped with jerk hot and sour peppers.
